Sellar el pato: En una olla con un poco de aceite, dorar las presas de pato por ambos lados. Retirar y reservar.<br>2. Hacer el aderezo: En la misma olla, sofre\u00edr la cebolla, el ajo y el aj\u00ed amarillo hasta que la cebolla est\u00e9 transparente. Agregar el culantro licuado y cocinar unos minutos m\u00e1s.<br>3. A\u00f1adir el l\u00edquido: Incorporar la chicha de jora y dejar reducir un poco. Luego, agregar las presas de pato y el caldo. Cocinar a fuego medio hasta que el pato est\u00e9 tierno.<br>4. Cocinar el arroz: Retirar las presas y agregar el arroz, la zanahoria y las arvejas. Ajustar la sal y cocinar a fuego bajo hasta que el arroz est\u00e9 listo.<br>5. Servir: Colocar el arroz en un plato y poner una presa de pato encima.
